2 cups grated carrots1/2 cup chopped salted peanuts3 tablespoons lemon juice1/2 teaspoon salt1 teaspoon white sugar1 green chile pepper, seeded and diced2 tablespoons finely chopped fresh cilantroIn a medium serving bowl, toss together the carrots and peanuts. In a separate bowl, whisk together the lemon juice, salt, sugar, chile pepper and cilantro. Pour over the carrots and stir gently to coat. Serve immediately.
